1880 Union Hotel Saloon Roars Back to Life with Stunning Local's Night!

Los Alamos was buzzing on October 30th, 2025, as the 1880 Union Hotel's Saloon opened its doors for its first public event in over six years! And what a night it was! We were thrilled to welcome over 200 of our amazing local friends and neighbors to celebrate the revival of this historic space. The atmosphere was electric as guests mingled, sipped on exceptional drinks, and enjoyed the company of friends old and new.

**October 30th Menu**

Chef Noban crafted a signature menu of bar favorite’s with a twist for our first locals night.

Executive Chef Noban Shahid and his team outdid themselves, serving up a incredible array of bar bites that perfectly complemented the evening. From the crowd-pleasing Braised Short Rib Sliders with slow-cooked beef, house chimichurri, and pickled onions, to the crispy and creative Cauliflower Wings (Vegan), there was something for everyone to enjoy. The Chicken Tenders with buttermilk brine and blackened ranch were a hit, and who could resist the sweet finish of Spiced Churros with spiced chocolate?

The drinks were flowing thanks to the incredible beverage team featuring local bartending icons Sara Scott & Dana Mancillas. They crafted exceptional cocktails all night long, keeping everyone refreshed and in high spirits. We were also honored to showcase the talents of amazing local winemakers, including Storm, Marbeso, and Lo-Fi Wines. The stunning floral arrangements by Renae's Bouquet added a touch of elegance, and the Martini Glasses from Santa Ynez Elite Rentals tied everything together perfectly.

And to top it all off, everyone went home with a commemorative postcard featuring an original photograph of the 1880 Union Hotel – a little piece of history to remember the night by!

The energy and excitement of the event were truly unforgettable. It was heartwarming to see so many familiar faces and feel the support of our community. Los Alamos is truly a one-of-a-kind town and we feel so grateful to be apart of it!
